It's so good to have you here with me on this trip, I'll tell you my story:
I am Ana, I’m 31 years old and in January of 2016, I decided to change my life and moved to London. I have always been passionate about food and have a lot of fun cooking and discovering new flavors and new foods.
On this journey of passion for cooking, almost from the beginning, I started to be interested in studying nutrition and investigating ways to cook in a way that gives us pleasure but at the same time promotes our general health and well-being.
By the time I arrived in London I discovered a whole new world of possibilities and started doing a series of courses and workshops about nutrition and healthy eating. In September 2016, I enrolled in the Holistic Nutrition Coach training at the Institute of Integrative Nutrition of New York and wow, that’s when my life changed!
In the meantime, I started to meditate more often and started the 200-hour Meditation Teacher Training course with Charlie Knoles. This course completely changed all the misconceptions I had about meditation. Meditating is much simpler and more efficient than I ever imagined.
In March, I pulled all my strengths and left my full-time job to devote all my time to my education and training. From that moment, when I had the courage to take the leap of faith to put myself first and invest time in myself, I began to align my priorities with what made me happy and everything began to flow. I then realized that I was on the right path - I did not look back!
During this path of improvement and self-discovery, I fulfilled another of my dreams and started working part-time at a vegan and gluten-free restaurant, Salad Pride founded by David Bez. It was there that I had the opportunity to connect again with my passion for cooking. I learned a lot and above all, it was a lot of fun!
But this magical whirlwind of events forced me to create strategies in order to not lose control and to not sacrifice my health. I had to learn how to stop and manage the stress that is building a career in London. A city that, if we let ourselves be swallowed, it turns us into robots.
Currently, I'm on course to fulfill another big dream of mine. I’m preparing to start Plantlab's Raw Cuisine course and learn how to make art with food (who said we shouldn't play with food?).
These are the reasons why SO GRATEFUL was born. Because I am immensely grateful for all, for the dreams I have realized, for the people who have made this journey with me and for the lessons I have learned in order to be here today and live my lives passion.
It was a couple of years of personal and professional transformation and this space is the materialization of all the work that I had to do in order to achieve all those dreams. I hope you can follow me on discovering new adventures, places, flavors and building
